Our Winter Warmer – Buttersquash and Leek Soup

1 x medium-large butternut squash
2x leeks
1 onion
1 x thumb length of ginger
  • chop the squash into cubes and bring to a boil in a large pot until soft 
  • add chopped leeks and onion to the pot and allow to simmer for 15-20 minutes
  • and season with salt and pepper
  • blend all the contents of the pot with the sliced ginger until you have the desired consistency.
4-5 serves  … simple and YUMMO!
